Mark's Go-To Summer Recipe

oslyn instructor MARK FORKOS has your new favorite recipe for the summer. Hint: it involves avocados.

My current go-to favorite recipe is ahi tuna and avocado tacos. I am obsessed with them because they are light, fresh and easy enough to make.

You can eye all of the ingredient amounts to make them to your liking. They satisfy hunger without being too filling and because all of the ingredients are fresh, they're a very healthy snack, too. Especially during this time of year, the tacos are great to enjoy with a margarita in the sun, just saying!

Ahi Tuna + Avocado Tacos

  • Sushi-grade tuna — cubed
  • Fresh ginger — finely chopped
  • Fresh scallions — finely chopped
  • Fresh cilantro — finely chopped
  • Fresh avocado — cubed
  • Low-sodium soy sauce
  • Fresh-squeezed lime juice
  • Sesame seeds
  • Soft corn tortillas

Mix all of the ingredients in a bowl and spoon into a tortilla shell.
