This breakfast is easy and filling and simple and nutritious and raw and and and… It’s a fantastic choice for getting your day started right without any sugar or empty carbohydrates. Packed with whole grains from the oats, protein from the almond milk, and whatever yummies you add into it (I love dates, cinnamon, chia seeds and walnuts), Overnight Oats are 100 percent no fuss, easy on the go, and guaranteed to give you the energy you need.
I cannot tell you how easy this “recipe” is. Okay, I’ll tell you: IT’S REALLY CRAZY RIDICULOUS EASY! It also happens to be raw(ish), vegan, and wildly healthful. Once upon a time, I struggled with breakfast and veganism. It can be tricky, I admit, but once you find your go tos, it’s a snap. This recipe takes a tad bid of forethought, but almost no prep and literally zero time in the AM.
Here’s how you do it:
Some time before you go to bed at night, put the following ingredients into a glass jar or bowl or whathaveyou:
* Oats — I like to buy Bob’s Red Mill Gluten-Free Rolled Oats — use as much as you’d like to eat in the morning or enough for as many of you as there will be breakfasting
* 1 to 2 tablespoons of chia seeds
* 3 to 4 chopped dates
* 1 tablespoon of raw honey
* 1 handful of walnuts
* 3 tablespoons of coconut flakes
* 1 teaspoon of cinnamon
* 1 teaspoon of vanilla
* Enough almond milk to cover (this is the “tricky” part…pour and let it soak in, then pour more, soak, pour…)
Cover and leave it in your fridge until the morning. Serve cold. You can sprinkle a bit more cinnamon and/or coconut on top and a splash of almond milk to finish it. Enjoy!
