2 tablespoons olive oil
1 leek, washed well and diced
1 small fennel bulb, green parts discarded, white parts diced
1 yellow onion, diced
2 cloves garlic, finely minced
1 fresh bunch beets, greens still attached
Coarse salt
Freshly ground black pepper
6 cups good quality vegetable broth
Heat the olive oil in a soup pot set over medium heat. Add the leek, fennel, onion and garlic and cook, stirring now and then, until softened, about 10 minutes. Try to avoid giving the vegetables color, just get them to sweat.
Meanwhile, wash the beet greens thoroughly and give them a coarse chop. Since the soup is all about the nutrient-dense, often-neglected, really-tasty leaves, you can either set the beets aside for something else (a beet and avocado salad a la Frankies in Brooklyn is pretty rad) or you can steam or roast them, peel them and then finely dice them and slip them into your soup bowl.
Back to the soup. Add the greens to the vegetables along with a large pinch of salt and a few generous grinds of pepper. Stir to combine and then pour over the stock. Turn the heat to high, bring the soup to a boil and then turn it off the flame. You want the greens to be just wilted and still have a bit of integrity. Carefully puree the soup in a blender and then, if you're feeling really fancy, pass it through a sieve into a clean pot to make it really smooth. Season to taste with more salt and pepper. Note that this soup can be chilled and eaten cold. Very chic.

When the New York Times debated what single best exercise is, this is what they came up with. Sound familiar?

“I think, actually, that you can make a strong case for H.I.T.,” Gibala said. High-intensity interval training, or H.I.T. as it’s familiarly known among physiologists, is essentially all-interval exercise. As studied in Gibala’s lab, it involves grunting through a series of short, strenuous intervals on specialized stationary bicycles. In his first experiments, riders completed 30 seconds of cycling at the highest intensity the riders could stand. After resting for four minutes, the volunteers repeated the interval several times, for a total of two to three minutes of extremely intense exercise. After two weeks, the H.I.T. riders, with less than 20 minutes of hard effort behind them, had increased their aerobic capacity as much as riders who had pedaled leisurely for more than 10 hours. Other researchers also have found that H.I.T. reduces blood-sugar levels and diabetes risk, and Gibala anticipates that it will aid in weight control, although he hasn’t studied that topic fully yet.
What does this translate to for humans?
In this modified version, you sprint for 60 seconds at a pace that feels unpleasant but sustainable, followed by 60 seconds of pedaling easily, then another 60-second sprint and recovery, 10 times in all.
Participants also enjoyed H.I.T. more than longer more static routines, presumably because they "were less bored."
