Nothing is worse than the dreaded lunchtime rut, so you can imagine our excitement at Soul Corporate when a healthy new lunch spot opened just down the street. MULBERRY AND VINE, started by Michelle Gauthier, Genevieve Lynch and Executive Chef Justin Schwartz offers nutritional (and deee-licious) dishes with high quality ingredients that you can grab quickly. Soul spoke with SC rider Michelle Gauthier about the experience of opening a restaurant, her process for designing the recipes and the future of healthy food!

We asked our SOUL instructors what they're cooking up in the kitchen when they're not rocking out on their bikes. In the upcoming weeks, we'll be sharing their responses and first up is BEA DEL ROSARIO with her recipe for salad pizza!


One of the most common questions we get here on the Soul Blog is "What do your instructors eat?" So we figured we'd ask them! Not surprisingly, our instructors eat lots of healthy, unprocessed foods... with a few treats thrown in for good measure.
Instructor extraordinaire CLARE WALSH tells SoulCycle about her first year as a vegan! But be forewarned: As anyone who has taken her class before can tell you, Clare is very convincing!!!

Why did you become vegan?
I became vegan kind of by accident about a year and 2 months ago. I was having a cup of tea with Danny Kopel (if you haven’t taken his class RUN don’t walk- he is truly an amazing Soul) and he began to tell me about his vegan lifestyle.
Summer is here and it's hot. One of our favorite summer treats also happens to be a super food: KIWIFRUIT. Though kiwis are often overshadowed by superfoods like blueberries, here are some great reasons to load up your grocery cart with these fantastic furry little fruits.

So pick yourself up some kiwis and begin the summer slimdown!

2 tablespoons olive oil
1 leek, washed well and diced
1 small fennel bulb, green parts discarded, white parts diced
1 yellow onion, diced
2 cloves garlic, finely minced
1 fresh bunch beets, greens still attached
Coarse salt
Freshly ground black pepper
6 cups good quality vegetable broth
Heat the olive oil in a soup pot set over medium heat. Add the leek, fennel, onion and garlic and cook, stirring now and then, until softened, about 10 minutes. Try to avoid giving the vegetables color, just get them to sweat.
Meanwhile, wash the beet greens thoroughly and give them a coarse chop. Since the soup is all about the nutrient-dense, often-neglected, really-tasty leaves, you can either set the beets aside for something else (a beet and avocado salad a la Frankies in Brooklyn is pretty rad) or you can steam or roast them, peel them and then finely dice them and slip them into your soup bowl.
Back to the soup. Add the greens to the vegetables along with a large pinch of salt and a few generous grinds of pepper. Stir to combine and then pour over the stock. Turn the heat to high, bring the soup to a boil and then turn it off the flame. You want the greens to be just wilted and still have a bit of integrity. Carefully puree the soup in a blender and then, if you're feeling really fancy, pass it through a sieve into a clean pot to make it really smooth. Season to taste with more salt and pepper. Note that this soup can be chilled and eaten cold. Very chic.
